Delaware grapes from Yoichi are soaked in juice with the skins before fermentation to bring out the maximum flavor.
This orange wine is then fermented in old barrels and aged for about a month.
Rita Farm & Winery is the third small winery to open in Yoichi, Hokkaido, and is run by a married couple.
All of the wines made from special varieties are made using 100% grapes from their own vineyards, and in order to pursue the terroir, the wines are made using natural fermentation with wild yeasts.
The wine is transported using gravity alone to avoid stress, and is bottled using a gravity-type filling machine.
