An elegant wine with soft tannins
Made from 5 red grape varieties grown in our own vineyard.
All varieties are mixed and fermented with wild yeast, with a maceration period of 11 days.
After fermentation, the wine is pressed and undergoes malolactic fermentation in barrels (approx. 14 days), then aged in barrels for 11 months before bottling.
A spicy aroma reminiscent of black pepper, with black fruit notes such as cassis and blackberry.
Smooth on the palate, with firm acidity and rich fruitiness and tannins that spread throughout the mouth.
Cave an is a winery founded in 2022 by Masako Anzo, a female winemaker who was in charge of cultivation and brewing at Marufuji Winery, a long-established winery in Katsunuma, Yamanashi Prefecture.
Their own vineyards, located in 6 plots (approximately 1 ha) in the mountainous Manriki area of Yamanashi City, Yamanashi Prefecture, at an altitude of about 400m, cultivate Koshu, Petit Manseng, Albariño, Tannat, Petit Verdot, and Marselan.
In the mountainous Manriki area of Yamanashi City, which Anzo describes as "a landscape reminiscent of the prestigious vineyards of the Côte d'Or in Burgundy, France," they aim to produce well-balanced, soft wines that reflect the terroir and pair well with Japanese cuisine.
