[Cave d'Occi Mitsubachi (Chenin Blanc) 2023]

According to the winery, "This is probably the best it's ever been."

Made from Chenin Blanc grown in their own vineyard, aiming for a gentle taste that seeps into the body.
It undergoes 3 days of skin contact, during which it acquires nuances of acetic acid.
Fermented and aged in barrels, then bottled.

On the nose, it has notes of ripe fruit, honey, and small white flowers.
On the palate, a thick, sweet liquid spreads over the tongue, followed by vanilla and nutty notes derived from the barrel.
The aftertaste is a subtle bitterness and umami that slowly seeps in.

To fully appreciate the quality of the liquid, please enjoy it not too chilled.
