- Commitment to water: The water used to brew our designated sake (ginjo, junmai, and honjozo) is selected from the underground waters of the Chikugo River, and is most suitable for sake brewing.
・Commitment to rice: The varieties used are Yamada Nishiki from Itoshima, Fukuoka, and Yume Ikken from Fukuoka Prefecture. By washing with a large amount of water and completely washing away the bran, sake with a clean and straightforward taste is produced. As the moisture content of the raw rice affects the quality of the sake, the moisture content of the raw rice is also properly managed. This creates good koji, resulting in high-quality sake.
・Commitment to yeast and koji In order to ferment with healthy yeast, we mainly use "home-grown yeast" that we have grown ourselves. There are very few companies in Japan that use black koji, which is used for shochu, for sake (Junmai Ginjo Kurokabuto).
