[CEDAR EMBER Kuri-Kogane Wooden Cask-Aged Imo Shochu]

Two expressions of Kuri-Kogane brought out by the wooden cask.

The third release in the CEDAR series. A seasonal imo shochu made from rare "Kuri-Kogane" sweet potatoes, fermented in cedar wood casks.

"CEDAR" is the English word for cedar wood. This series is dedicated to the traditional, now rare method of wooden cask fermentation, drawing out the unique characteristics of the cask and the innate flavor of the sweet potatoes.

For this edition, we used "Kuri-Kogane," a rare sweet potato grown by only a few producers. It is fermented using white koji and atmospheric distillation, then aged carefully for over a year.

Its greatest appeal is how its character shifts depending on how it is served.
On the rocks or with water, it offers a crisp mouthfeel followed by a sharp, pleasant finish reminiscent of glowing embers. When served with hot water, the aroma blossoms softly, and a gentle sweetness reminiscent of chestnuts slowly spreads across the palate.

Two expressions born from rare Kuri-Kogane, cedar casks, and patient aging. We invite you to enjoy the unique taste of the CEDAR series by trying it in different ways.
