We use fully ripe Koshu harvested in Katsunuma Town, Yamanashi Prefecture.
The fragrance is brought out through short-term skin contact (soaking the fruit skin in fruit juice and extracting ingredients from the fruit skin) and low-temperature fermentation.
And by finishing it without filtration, we are maximizing the potential of the Koshu variety.
The aroma and rich sourness typical of Koshu seeds go well with Japanese cuisine, especially soba noodles and light soup stock.
A gentle white wine that goes well with the dining table and is a daily drink.
