This series was brewed by interpreting Gasanryu's "free-thinking spirit unconstrained by anything" to the best possible extent. We went ahead with the brewing, but never really thought about whether it was okay to sell it.

The "Shunyo" rice used this time is said to produce a light and crisp sake with reduced amino acids, which cause off-flavors, because it has fewer water-soluble and easily digestible proteins that koji and yeast can process.

This Junmai-shu is "said" to have a Muscat-like aroma, which has been a hot topic recently.
