Kokubu Sake Brewery's potato koji is created using a unique method by Nobuhisa Yasuda, who directly adds seed koji to steamed round potatoes without undergoing any special processing such as drying or shredding the potatoes.
This unique method of making potato koji is also used for ``Yasuda'' and ``Flamingo Orange.''
