Kokubu Shuzo's potato koji is made using a unique method by master brewer Yasuda Nobuhisa, who applies the koji starter directly to steamed whole potatoes, without any special processing such as drying or chopping the potatoes.
This unique potato koji making method is also used in "Yasuda" and "Flamingo Orange" .
