We use Koshu grapes grown in our own fields in the Katsunuma Cho-Toriidaira area using no-tillage methods without using chemical pesticides or fertilizers, and ferment them in French oak barrels.
Bottled without filtration after barrel aging using natural yeast with no yeast additives.
It has a unique aroma like apple compote, and citrus aromas like orange, Kiyomi mandarin orange, yuzu, kabosu, white flowers, and quince.
You can also feel the vanilla aroma coming from the barrel and the flavor of yeast.
It has a lively natural fruit flavor, a little sweetness and acidity, and is well balanced overall.
On the palate, aromas of white flowers, apple compote, and citrus fruits spread.
The aftertaste is very long, with a natural aroma that lingers in the mouth and is very pleasant.
Enjoy it with chilled shiso and sea urchin pasta or oysters pickled in oil.
