Carefully selected Kogane Sengan is prepared with hand-made koji in a jar for both the first and second stages and then distilled under normal pressure. Furthermore, it is made without sparing time and effort, such as storing it in a jar.

Miyagi Prefecture's only brewing storehouse made of earthenware and a koji lid is used in the koji room.
The earthen storehouse acts as a heat insulator, keeping the temperature inside the storehouse constant by shielding it from the hot sun, and has various positive effects such as the fermentation of moromi and the aging of distilled shochu.
