Since 2019, Yachiyoden Sake Brewery has started cultivating koji rice in paddy fields, which has increased to 4.2 chobu this year, and 40% of the koji rice used is our own rice.
From this bottle, we have reached a domaine that uses our own grown potatoes and rice!
Beniharuka, which is grown in-house and carefully harvested using the harvesting method for fruits and vegetables, is hung under certain environmental conditions for two months as raw potatoes.
It promotes starch saccharification by the potato's own enzymes and turns it into molasses, making it a fully ripe molasses like nourishment.
It expresses the vitality of the field like the sun, and you can enjoy the natural sweetness reminiscent of honey and apple nectar.
We recommend mixing it with hot water, on the rocks, or chilling the bottle straight.
