Blanc de Blancs made with care
A single-vintage dry sparkling wine that undergoes secondary fermentation in the bottle, blending Chardonnay mainly from Misawa Farm in Akeno Town and Hishiyama District in Katsunuma Town, with Koshu from Misawa Farm, carefully cultivated with low yields from trellis training.
It has been aged for over 4 years.
Long-term aging further enhances the complexity of its flavors, and its fine, creamy bubbles provide a pleasant mouthfeel.
Made by gently whole-bunch pressing, fermenting in old French oak barrels, and then secondary fermentation in the bottle.
Each bottle is hand-riddled and aged in the bottle for a long period of 48 months, followed by manual disgorgement (removal of lees).
