[GRAPEREPUBLIC Cuvée Shinden 2022]

An orange wine with aromatic notes, a mix of sweetness and bitterness

Made with 100% grapes from Nitta, Nanyo City, Yamagata Prefecture, where GRAPE REPUBLIC is located.
The grapes are organically grown without fertilizer or compost, and no pesticides other than Bordeaux mixture are sprayed.

Using two amphoras, one is used for approximately 40 days of skin fermentation with whole cluster grapes, mainly Delaware, which has high acidity, ripeness, and thick skin, placed directly into the amphora.
The other is used for 15 days of skin fermentation in an amphora with Delaware after destemming.
Aged for approximately 9 months in amphora.

The aroma is aromatic, like orange peel compote, ramune, and jasmine, characteristic of table grape varieties.
The taste also has a mixed impression of sweetness and bitterness, like orange peel, with smooth tannins.
The finish spreads with umami derived from unfiltered and grape skins and seeds.
