A satisfying drink with a burst of citrus bitterness and bubbles

The wine is brewed using 100% Delaware grapes grown at the Kanayama Farm in Nanyo City (characterized by thick-skinned Delaware grapes) without the use of Bordeaux or sulfur additives.
This Delaware plant was grown by covering it with plastic in the spring and allowing the winds of Nanyo City to pass through it fully.
Crushed and whole bunches are stacked alternately in tanks, the top of the tanks are sealed with vinyl, and the wines are left to macerate carbonically for 40 days. The wines are then left to ferment naturally without being touched, after which the juice is pressed and the wine is allowed to undergo secondary fermentation in the bottle after final fermentation is complete.

With an alcohol content of 12%, this wine is satisfying to drink and has a burst of bubbly with a bitter citrus flavor, making it a robust, slightly sparkling wine.
The 2022 harvest has an appealing bitter fruit aftertaste.
Of course, it can also be enjoyed as a still wine even after the bubbles have reduced.
