This wine is made from Yamagata Prefecture's Delaware grapes, slowly fermented whole with their skins and seeds.
By minimizing crushing and allowing the grapes' own power to slowly drive the fermentation, the wine spent 111 days in contact with the skins, layering color, aroma, and umami.
It was then gently aged in amphora. This extended fermentation process has brought out the grapes' vitality and profound flavors.
When poured into a glass, it reveals a cloudy, deep amber color. Upon opening, a slight effervescence can be perceived.
The rich fruitiness, reminiscent of yellow peaches and apricots, is layered with the refreshing acidity of rosehip tea, creating a juicy and expansive flavor profile.
While currently enjoyable for its fresh fruitiness, this wine will further develop its aromas and flavors through bottle aging, transforming into a more complex and profound expression.
Its sweet and sour umami pairs well with Japanese cuisine, and can be enjoyed with light dishes or those highlighting the natural flavors of ingredients.
