The lemons used in this LIBROM Lemon are grown without pesticides or fertilizers by Itoshima Lemon in Fukuoka Prefecture.
This craft sake is made with plenty of lemons that have blemishes around the edges and do not meet the standards, but the taste is perfectly fine and you can eat the skin as well.
The total weight of lemons used in the two tanks was 30kg!
After removing the blackened parts, the skin is peeled and then boiled.
The peeled lemons are cut in half and the master brewer Anami hand squeezes out the juice, which is then added to the mash and left to ferment.
A refreshing scent reminiscent of lemon and herbs, with a natural flavor and moderate bitterness.
