"HIRAN Infinity∞2024" is an ambitious work by Hiran that breathes new life into the traditional genre of sake. It is a special bottle born from a spirit of challenge that goes beyond the pursuit of traditional quality and breaks into unknown territory.

This time, master brewer Mori Yutaro's theme was "utilizing beer yeast."
Inspired by the popularity of craft beer and the rise of craft sake, the master brewer set out to create a "new flavor that goes beyond the boundaries of sake."
However, brewer's yeast has a low alcohol tolerance (up to about 10%), making it unsuitable for regular sake brewing.

So the master brewer adopted the Kijoshu brewing method. This unique approach maximizes the characteristics of the beer yeast and succeeds in drawing out a unique flavor and aroma. This bottle, completed after more than two years of trial and error, is a masterpiece that allows you to fully experience the depth and potential of fermentation.

The fruity and complex aroma unique to beer yeast, the soft sweetness and refined acidity create a light and elegant balance. The aftertaste is gentle sweetness and slightly bitter, inviting you to drink another glass.
