From the transparent yellow straw-colored exterior, a lovely fine bubble rises up to the point of overflowing.
You can feel the nuances of refreshing green apples in the scent of citrus fruits such as grapefruit and lemon.
In addition, the spicy scent of Japanese pepper and the cracker-like scent of aging create accents and complexity.
When you put it in your mouth, it leaves a dry impression and fine, gentle bubbles.
Afterwards, the sour yogurt-like acidity is comfortably united and goes down smoothly.
Chill fully ripe Koshu and ripe Koshu at 4°C before crushing.
After the juice is settled for a day, the supernatant is fermented in separate stainless steel tanks at a low temperature.
Fermented, blended, bottled and aged in bottle for 12 months.
We add Night Harvest Koshu grown in our own fields to reduce the amount of disgorgement, and finish it with non-dosage ( no sugar added ) .
