We blend Yamashiroya Standard class , 1st class , and even higher-grade special class coffee, and select from a variety of blending patterns.
Although it is a blend, the quality of the sake is consistent and the aroma and flavor are well balanced.
While taking advantage of the acidity unique to kimoto brewing, we focus on creating a mild aroma and a soft flavor without the harshness that comes with aging.
The sake has been aged to the perfect degree, typical of hiyaoroshi sake, to give it an enhanced flavor, making it a perfect sake to enjoy at Yamashiroya.
Of course, it can be enjoyed chilled, but we also recommend Yamashiroya, which has been aged to enhance its flavor.
Kimoto-brewed sake contains a lot of umami compounds, such as lactic acid and succinic acid, known as onshisan (warm umami acids), which become more delicious when heated, so heating it brings out the umami even more, making it even more delicious.
