【GRAPEREPUBLIC Cuvée Shinden 2022】

An orange wine with aromatic notes, a blend of sweetness and bitterness

Made with 100% grapes from Shinden, Nanyo City, Yamagata Prefecture, where GRAPE REPUBLIC is located.
The grapes are organically grown without fertilizer or compost, and with no pesticides other than Bordeaux mixture.

Using two amphoras, one focused on Delaware grapes with high acidity, ripeness, and thick skins. These were put into the amphora whole bunch for about 40 days of skin fermentation.
The other amphora contained destemmed Delaware grapes for 15 days of skin fermentation.
Aged in amphoras for approximately 9 months.

The aroma evokes compote orange peel, ramune, and jasmine, typical of table grape varieties, creating an aromatic impression.
The flavor also presents a mix of sweetness and bitterness, like orange peel, with smooth tannins.
The finish offers an umami flavor derived from the unfiltered process and the skins and seeds.
