A delicate, translucent orange wine
This amber wine is made from two aromatic varieties: Shine Muscat and Niagara.
The Shine Muscat undergoes fermentation with lightly crushed whole bunches, after which more whole bunches of Shine Muscat are added and slowly macerated and fermented for about two weeks.
Since Shine Muscat is difficult to crush, the grapes are mashed by hand rather than punched down, allowing them to dissolve into the fermenting must.
Although cultivated with seeds, many of the berries are mutationally seedless, so whole bunches are used and pressed firmly to impart a gentle astringency and bitterness to the wine.
While categorized as an orange or amber wine, its color is pale, closer to a yellow hue.
Kanda Budoen is a historic winery founded in 1903. They carefully ferment estate-grown grapes that thrive in the Sanriku climate, producing wines with natural flavors.
